Grilled Fruit Salad with Kiwi Sauce

A Light and Simple Dessert
- 4 kiwi, peeled and chopped
- 3 T sugar
- Pinch of kosher salt
- 4 slices cored pineapple, ¾” thick
- 3 peaches, peeled and cut into eighths
- 1 C fresh blueberries
for Kiwi Sauce
Place chopped kiwi in food processor and pulse until smooth.
Transfer kiwi to small saucepan over medium heat.
Add sugar and pinch of salt.
Bring mixture to a boil, stirring occasionally.
Set aside to cool.
to assemble
Preheat grill pan over medium high heat.
Place pineapple and peach slices on grill and sear 2-3 minutes per side, until fruit is soft and sugar begins to caramelize.
Place a slice of pineapple in the center of dessert plate, fill center with ¼ C fresh blueberries.
Arrange 6 peach slices on each plate, and drizzle with kiwi sauce.
